Preheat the oven to 180 degrees and grease a muffin tin with butter.

Combine flour, coconut blossom sugar, baking powder, salt and chia seeds in a big bowl. Make a hole in the mixture and set aside.

In another bowl, beat one Chiquita banana, buttermilk, eggs, lemon juice, lemon zest and vanilla extract. Also add the melted butter.

Pour the liquid mixture in the hole in the dry ingredients and use a spatula to mix the mixtures into each other little by little until it forms a consistent batter.

Pour the batter into the muffin tins.

Cut the other Chiquita banana into pieces and place a Chiquita banana-piece on each muffin.

Bake for approximately 15-20 minutes.
